Sticky Apple Cake 🍎
Ingredients:
Cake:
- 4 Apples (750g)
- 200g Sugar
- 500g AP Flour
- 300g Sugar
- 5g Baking Soda
- 1 t Cinnamon
- 6g Salt
- 4 Eggs
- 425g Blended Oil
- 12g Vanilla Extract
- 150g Optional Nuts
Brown Sugar Glaze:
550g Light Brown Sugar
200g Butter
1 tsp Cinnamon
10g Vanilla Extract
70g Heavy Cream
Instructions:
Ahead of Time:
Core and slice Apples (skin on is fine). Weight of Apples broken down should be around 750g, but doesn’t need to be exact. Toss with Sugar and allow to macerate at least one hour (and up to 24 hours. Proceed with recipe below.
Cake Procedure:
Combine Flour, Sugar, baking soda, and Salt - stir together.
Whisk Eggs with Oil and Vanilla.
Strain juice from macerating apples and whisk in.
Stir (spatula) in Flour just until combined.
Stir in Apples.
Pour into a 9”×13” pan.
Bake at 350F (convection oven, high fan) for 40-50 minutes (turning half way).
Glaze: (start 5 minutes before the cake is done)
Combine all ingredients for Glaze in a saucepan.
Cook over medium heat, stirring gently until mixture is combined and bubbles.
Pour over hot Cake, right from the oven.
Options
- You can add Nuts or additional Spices to the Cake mixture.
- You can also add flavors to the Glaze, such as beer or wine.
